Keen to protect a rundown former dairymaid’s cottage, Noel and Dee embarked on a renovation project that would preserve the old stone building and result in a thriving business.

Back in 2004 when Noel and Dee first viewed an elegant lodge near the pretty village of Shillelagh in Wicklow, they were not only seduced by its beauty, but also the lovely courtyard to the back of the house with its series of pretty stone buildings, which had formerly been farm staff houses.
